Crop varieties:Cerasuola, Nocellara (>80%) Biancolilla (< 20%).

Maximum olive yield:not exceeding 20%.
Collection:by hand, from October to the beginning of November, placed in small ventilated boxes and pressed within 24 hours.
Squeezing:pressing at a controlled temperature according to the filtered cold method.
Acidity:0.2 – 0.3 (max 0.5 according to PDO specifications).
Color:green with golden yellow reflections.
Perfume:net olive with herbaceous tones.
Flavor:fruity, slightly spicy and bitter.
Pairings:very appreciated raw on salads, soups, fish and meat.
